A Flavorful and Speedy Breakfast Solution for the Holiday Hustle

Plus, eating a hearty, protein-packed breakfast in the morning can help prevent you from overeating holiday foods later in the day."

A delicious and simple breakfast choice that has become a mainstay on Hungry-Girl.com is Egg Beaters or Egg Beaters with Yolk. Made from real eggs with a touch of yolk for flavor, Egg Beaters with Yolk contain 70 percent less fat, 75 percent less cholesterol and less than half the calories of traditional shell eggs. "There are dozens of ways to work Egg Beaters with Yolk into delicious breakfast recipes," Lillien says. "And with delicious varieties such as Southwestern, Cheese and Chive, and Garden Vegetable, there's an option for everyone."

Lillien also notes that using canned and frozen vegetables is a healthful way to perk up recipes and can make cooking for a group more manageable. It also helps to do a little leg work the night before. Prepare a breakfast casserole after dinner and refrigerate overnight. The next morning, heat it while guests are waking up, and the smell of a hot breakfast will be sure to get them out of bed.

A great example of a quick and healthful breakfast that can easily be made for a crowd is Hungry Girl's Super-Duper Veggie Scramble.


Ingredients:


4 veggie burger patties, thawed if previously frozen

2 cups Egg Beaters, or Egg Beaters with Yolk

1 cup chopped tomatoes

1 cup chopped mushrooms

4 tablespoons chopped onions


Directions:

1. Chop veggie patty into bite-sized pieces. Place mushrooms, onions and veggie patty pieces in a pan spritzed with nonstick spray, and cook over medium heat for two minutes.

2. Add egg substitute and tomatoes to the pan. Scramble together until the eggs are cooked.

Makes four servings. Multiply the recipe as needed for larger crowds.
